プロジェクトの第1号となった門仲は、運営会社であるQuotation Foodsの仲間も加わって、TSUMUJIのテーマのひとつである「事業の継承」を実現させた店舗をはじめ、フレッシュな挑戦がたくさん詰まった空間となっています。

ゲストのみなさんや門仲の街との関わり合いによって、TSUMUJIの成⻑とともにそれぞれのクリエイターやショップが熟練されていく変化を、一緒に楽しんでいただけたら嬉しいです。

食の職人たちには、なににもとらわれず、作りたいものや目指したい世界に存分に挑戦してほしい。 人々に愛されてきた歴史ある味、魅力ある食文化は、守り残していきたい。そんな思いが TSUMUJI の始まりです。

 「食の継承」はまた、未来を考えること。次世代に幸せな食体験をつなぎ、誰もが食を大切に楽しめるゆたかな世界になってほしい。この場所が、食を知覚し、人との出会い頭となることで、その願いを果たしていきたいと考えています。さまざまなストーリーを背景に持つパートナーたちと TSUMUJI ならではの価値を共有し、共創していく。

その価値を世の中に発信し、ゲストの日常で親しまれる、地域に拓けた場所でありたいと思います。
